  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Wet Ingredients:

  • 2 tablespoons chia seeds + 6 tbsp water (chia eggs)
  • ½ cup melted dairy-free butter or Coconut Oil
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • ¼ cup oat milk
  • 1 teaspoon vanilla extract

Mix-Ins:

  • ¾ cup butterscotch chips
  • ½ cup dark chocolate chunks (optional)

Instructions:

1️⃣ Prepare the Chia Egg → Mix chia seeds & water in a small bowl. Let sit for 5-10 min until gel-like.
2️⃣ Mix Dry Ingredients → In a bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
3️⃣ Cream Wet Ingredients → In a large bowl, whisk melted butter, brown sugar, and granulated sugar until smooth. Add chia egg, oat milk, and vanilla.
4️⃣ Combine → Gradually mix the dry ingredients into the wet. Stir in butterscotch chips and optional chocolate chunks.
5️⃣ Chill the Dough → Cover & refrigerate for 30-45 min (helps with chewiness).
6️⃣ Bake → Preheat oven to 350°F (175°C). Scoop dough onto a lined baking sheet. Bake for 10-12 minutes until set but still soft in the center.
7️⃣ Cool & Enjoy → Let cool for 5 min before transferring to a wire rack. They will firm up as they cool but stay fudgy inside!
