Sweet Blessings: Gluten-Free Cranberry White Chocolate Chip Cookies for Church Fellowship

I chose Gluten-Free Cranberry White Chocolate Chip Cookies, a perfect balance of sweet, tart, and creamy flavors. Cranberries symbolize healing and renewal, reminding us to release the past and embrace the blessings of the present. White chocolate, smooth and sweet, represents light and divine love—a reminder that Spirit is always near, offering guidance, warmth, and support.

These cookies are soft, chewy, and naturally gluten-free, making them a wonderful treat that everyone can enjoy. Whether shared over a cup of tea during fellowship or wrapped up as a small gift of kindness, they carry the same message: sweetness is meant to be shared.

Vegan & Gluten-Free Cranberry White Chocolate Chip Cookies

Ingredients:

  • ½ cup coconut oil (or vegan butter, softened)
  • ½ cup brown sugar
  • ¼ cup maple syrup (or granulated sugar)
  • 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water, let sit for 5 min)
  • 1 teaspoon vanilla extract
  • 1 ½ cups gluten-free all-purpose flour (with xanthan gum)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup dried cranberries
  • ½ cup vegan white chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flaxseed meal and water. Let it sit for about 5 minutes until it forms a gel-like consistency (this is your flax egg).
  3. In a large mixing bowl, cream the coconut oil, brown sugar, and maple syrup until smooth.
  4. Stir in the flax egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together gluten-free flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until a soft dough forms.
  6. Gently fold in dried cranberries and vegan white chocolate chips.
  7. Scoop tablespoon-sized portions of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 10–12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack.
