This week, we’re diving into something extra special—Gluten-Free Double Chocolate Chip Blondies that are not only rich, chewy, and indulgent but also entirely vegan. The flax egg swap makes these treats accessible to everyone, without compromising on flavor or texture. Whether you’re making them for a spring gathering or just treating yourself, these blondies are sure to satisfy.


Ingredients

  • 1/2 cup coconut oil or vegan butter, melted (I recommend refined coconut oil for a neutral flavor)
  • 3/4 cup pure maple syrup or coconut sugar (maple syrup will give a fudgier texture, while coconut sugar will be a bit firmer)
  • 1 flax egg (1 tbsp flaxseed meal + 2.5 tbsp water, mixed and set aside for 5 minutes to thicken)
  • 1 tsp vanilla extract
  • 1 cup gluten-free all-purpose flour blend (make sure it includes xanthan gum)
  • 1/2 tsp baking powder
